Borani Badenjan “Egg Plant dish”


Borani Badenjan is an afghan dish, served as side dish or an appetizer; it is also idle for lunch. Afghans cook Borani Badenjan differently than any other nation. It is the perfect pick for vegetarians. It is one my favorite dishes.
You will need the following items to cook the Borani Badenjan.

Ingredients (3 Egg Plant, 5 medium Tomatoes, 2 Green Bell pepper, 2 Red Bell pepper, 3 Garlic,
4 Green Chilies, Salt, Oil, Yogurt, Tomato Sauce, Dried Mint)

Now let’s start cooking process. The dish is easy and it won’t take longer once you learn how to cook it.
1- Cut and slice the egg plant into quarter square pieces
2- Slice tomatoes
3- Slice and cut the bell pepper rectangular way
4- Cut each chili into 4 long piece
5- Chop 2 fresh garlic than add ½ teaspoon salt and garlic to 16oz of tomato sauce and stir
6- Fry the egg plant
7- Now add tomato sauce into the pan, next add egg plant, bell pepper, slice tomatoes, chilies one layer
8- Add tomato sauce
9- Repeat step 7 & 8
10- Cover the top, turn up the stove to Hi
11- Let it cook for about 10minutes
12- In the meanwhile; chop 2 garlic add it to 12oz yogurt and add ½ teaspoon and blend it all together.
13- Microwave the yogurt for 45 seconds.

Once the dish is cooked, before serving the dish in plate, drizzle some mix yogurt over, place a layer of Egg plant, and then drizzle some yogurt over Egg plant.
At the end, sprinkle some dried mint and red cayenne pepper over the Borani Badenjan dish.

Pakistani Tea

Pakistani Tea

Pakistanis make tea different than regular traditional tea. They make tea with milk and sugar.
The recipe itself is very easy to follow. All you need is some water, milk, black tea and sugar; that is it.
Let’s make four cups of tea

2 cups water
2 ½ teaspoons black ground Lipton tea
3 teaspoons sugar
2 cups milk
Boil the water with tea and sugar only
Once the water is boiled, next pour the milk over
Let it boil, after boiling, get a filter; place the filter over the cup
Next pour the Pakistani Tea, so it filters and it will be free of tea leaves.

For diabetics, skip the sugar part or add sweet & low sugar to make the tea sweet. You cannot find Pakistani Tea in major grocery stores, except Pakistani grocery stores. It is also possible to make tea with English breakfast tea.
For the ones, who has a busy schedule or would like to make tea at the office. Please follow the steps below.
One glass 12oz water
Add two bags of Black English breakfast tea
Microwave it for 2 minutes
Pour 4 packs of little Half & Half
Add two teaspoons of sugar
Be care full, the tea that you are going to drink is extremely hot. Please do not drink right away.

Yogurt Salad

Yogurt Salad

Yogurt Salad is an Afghan salad, served as an appetizer or chips dipping. This Yogurt salad recipe can also be edited, by adding some avocado will not only give a different flavor to the salad but also it may become Mexican wacamole.

1 Tomato
½ Onion
1 Cucumber
1/3 Celery
1 diced fresh garlic
¼ teaspoon salt
12oz yogurt
Some fresh cilantro

Now let’s make the salad, cut & chop tomato, cucumber, celery, onion.
Add salt over and mix all vegetables in yogurt inside a bowl.

Roasted Chicken

Roasted Chicken
Pick a favorite part of the chicken, take the skin off, and then make some cuts on parts of the chicken. So the chicken can be marinated properly with seasonings, that we will prepare next.
Now let’s get all the ingredients prepared for marinating the chicken.

Roasted Chicken Recipe

4LBs Skinless Chicken Leg and Thigh
3 medium onions
2 diced garlic
4-5 green chilies
2 Teaspoon Salt
3 Teaspoon Paprika
2 Medium Squeezed Lemons
2 Teaspoons Dried Basil
3 Tablespoons Olive Oil/Cholesterol Free Oil

Mix all the ingredients, next mix or coat the chicken. Please do not attempt to cook the chicken right away, leave the chicken for about an hour and cover the top of the pot. If the weather is hot, I recommend that you refrigerate the chicken and on cold weather there is no need for refrigeration.

After when the chicken is marinated please do the following steps;
Pre-heat the oven to 450 degrees
Spray the tray with the baking oil spray, then place one layer of chicken on the tray
Place the tray inside the oven and bake for an about 25-35 min
In the meanwhile slice the one red, green bell pepper and onion. Pour two tablespoon oil and fry the red, green bell pepper and onion all together. Cut some fresh cilantro, slice some lemons.

When the chicken is baked completely, turn off the oven, take out the chicken safely and make sure not to burn your hands. Put some chicken in a plate, top the chicken with bell pepper, onion, sliced lemons, next spread some cilantro on top for decoration.
Wow! I am graving for roasted chicken. I can’t write no more, so let’s eat. lol…….

How to brew coffee?

How to brew coffee?
You might be wondering, why I came up with this idea. Now a lot of us brew coffee, sometimes it is too dark or too light to drink. There is no secret behind a tasty coffee. Almost every brand will taste good. Only if you know; how to brew it properly?
Measuring your ground coffee plays major role in brewing coffee. Lets brew the coffee then;

8 cups water
5oz ground coffee
Place filter in coffee maker
Pour water into the coffee maker
Add ground coffee
Start the coffee maker

Once the coffee is ready, please help yourself and enjoy your coffee. You can add half & half, low fat milk or flavored coffee creamer, powder coffee creamer, only if you chose to add.
Remember if the coffee stays longer than an hour in coffee maker. The coffee not only loses its freshness and tastes; but also it burns. Burnt coffee is not healthy and also it doesn’t taste better.
Tips on how to keep ground coffee fresh, always make sure to put the lid back on, every time you brew some coffee. It will be better if you can refrigerate the coffee.

Tomato & Cucumber Salad

Tomato & Cucumber Salad
3 medium cucumbers
4 Roma Tomatoes
2 medium Lemon, squeeze the Lemon in a cup
½ Teaspoon Table Salt
1/3 Teaspoon Black pepper
½ Red Chopped onion
2 Teaspoon Cider Vinegar
1/3 Teaspoon Mint
1 red & 1 Green Bell pepper

Now it is time to make the Tomato & Salad.

1- Cut the cucumbers in thinner rounded pieces
2- Cut the Roma Tomatoes into rounded thinner pieces
3- Slice the ½ red onion
4- Cut the red and green bell pepper into little square pieces
5- Grab a bowl; throw the cucumber, tomato, onion and bell pepper
inside the bowl.
6- Pour the Lemon juice and 2 Teaspoon of Vinegar on Vegetables.
7- Next add salt and mix all the Vegetables.
8- The last step, season the vegetables with mint on black pepper.
9- Now refrigerate the salad for 2 -3 hours, before serving.

New Roasted Potatoes

Hello Everyone;
I am excited to say it is my second post on the blog. My goal is to have 365 recipes posted, during a year. This time I am presenting the New Roasted Potatoes's recipe, which is one of my favorite dishes, now before we go over the cooking process. Let’s get prepared by gathering up the ingredients listed below.


New Roasted Potatoes
6 medium Red Potato
2 Tablespoon Olive oil / Cholesterol free Vegetable oil
1 ¼ Teaspoon dried basil
½ Teaspoon salt
1 teaspoon garlic powder
1 Teaspoon dried onion
2 teaspoon paprika
½ teaspoon red chili

Now let’s cook the new roasted potatoes,
Pre-heat the oven to 400 degrees
Boil the potatoes for at least 15 minutes
Cut each potato in half lengthwise
Mix all the above-mentioned ingredients
Coat the cut potatoes with the mixing individually
Spray the baking tray with cooking spray
Place the potatoes cut side up
Bake the potatoes about 25- 35minutes, until it bakes and the color turn close to brown.
After the estimated time your potatoes are now ready to be served. Remember the key to a delicious cooking is to love what you cook or have fun while cooking.
